If you’re looking for an exotic, simple-to-prepare healthy vegan snack, we have a great idea! Pineapple with Curry!

We drew the inspiration for this recipe from our very own Vegan Culinary Instructor, Elspeth (“The Speedy Vegan”) Feldman who spent a portion of her teenage years in Durban, South Africa—home to the continent’s largest population of people of Indian descent.

Elspeth has fond memories of exploring the large Indian spice markets, eating bunny chows and gobbling pineapple slices coated in curry powder from street vendors.

Believe it or not, people in hot climates like South Africa and Indian actually eat spicy foods to help them beat the heat and stay cool.

The fiber in pineapple can help remove sticky mucus & debris that can build up inside the body. Pineapple are full of beneficial vitamins and minerals such as vitamin C and manganese. Pineapples are also an excellent source of antioxidants. 

Pineapples contain bromelain, a group of digestive enzymes that breaks down proteins–which helps with digestion. Since bromelain has anti-inflammatory properties, consuming pineapple may also help with post-workout recovery by reducing tissue inflammation.
